So occasionally I will be posting recipes for all those that are following. Not to toot my own horn, but I am an amazing cook! **toot toot** LOL!
So after grilling on SuperBowl Sunday, we had steak and baked potatoes leftover. I didnt really feel like cooking but I certainly didnt feel like eating the same thing two nights in a row either! I made a one skillet meal with the leftovers, and it was delish!
Ingredients:
2 Medium Steaks (sliced fajita style)
Baked potatoes (sliced about 1/4 inch)
Cilantro (to taste)
Lime (again to taste)
2 packets Cilantro y achote Sazon seasoning (found with all the goya products)
Onion
Bell peppers (sliced thin)
Minced garlic
EVOO
Instructions:
Cut all ingredients, and drizzle with lime juice and sprinkle with Sazon seasoning. In a large nonstick skillet, drizzle EVOO and toss in minced garlic. Stir fry all ingredients until veggies are tender to your liking, and food is heated thoroughly. I ate mine with sliced avocado and it was to die for!
